Marvellous Medallions – so versatile, so delicious. Served here as a casserole with baby onions and mushrooms in a tasty sauce enriched with fresh herbs.
Slightly richer with the addition of a little oil, Gambardeli’s Marvelous Medallions are equally tasty in a casserole or in Marinara Sauce served with pasta and salad or threaded on a skewer as a kebab. Although Gambardeli’s Medallions have a little oil added, they are still low in fat and need to be drizzled with oil before grilling, heating in the oven or BBQ.

Serving suggestion is for a casserole.
Ingredients:
1 Pack of Gambardeli’s Medallions
6 round shallots peeled, or 1 onion peeled and quartered
1 Carrot peeled and cut into chunks
6 small white turnips peeled
6 spears of broccoli
1 tin of chickpeas drained
1 Tbs vegetable oil
250 ml Vegetable stock
1 Tbs soya sauce
A few sprigs of thyme or rosemary.
Optional 1 tsp grated ginger root.
Method
First heat the oil in a pot and add the shallots, carrots and turnips and sauté for a few minutes. Next add tomato puree and cook out for a few minutes . Then add 1 cup, 250ml, vegetable stock, soya sauce, herbs, Gambardeli’s Medallions and the chickpeas. Cook to heat through and then add the ginger. Finally serve with lightly steamed greens or salad and potatoes either baked, mash or new boiled.
You can add optional spices such as 1/2 tsp cumin and 1/4 tsp coriander or 1/2 tsp curry powder or smoked paprika at the sauté stage for a different flavour. serve with rice or noodles.
Alternatively
Add to a casserole, bean stew or to a tomato sauce. Make tasty kebabs. Thread the medallions on skewers, drizzle with oil and grill /BBQ or roast in the oven with seasoning of your choice- herbs and spices.

Instructions for use: Store in fridge. Remove all packaging and use within 48 hours of opening. Cook before use.
