Gambardeli’s Award Winning Vegan Wellington
Why not treat yourself to Gambardeli’s award winning Luxury Celebration vegan Wellington? So good we won a silver award at the British Pie Awards, 2019.
First we start with our delicious Epic Roast to make our Vegan Wellington. Next we cover the Epic Roast with Chestnut and mushroom Duxelles (pate). Finally we wrap it in a golden puff pastry. Just right for a wonderful centrepiece for your celebration.
The centre of the Wellington is Gambardeli’s Epic Roast, a tender, flavourful, protein. We use a bouquet of herbs and spices to make a full flavour profile that is delightful on its own but fantastic in our Wellington.
Next we slather our Epic Roast generously with our Chestnut and Mushroom Duxelles, pate. This pate is tasty on its own but it takes our Epic Roast to another level. To make our Duxelles pate we combine whole, roast chestnuts with sautéed chestnut mushrooms and flavourings.
Finally, we generously spread our pate onto our sheet of puff pastry. And wrap round our roast.
Gambardeli’s Award Winning Wellington
Get the best results from your Gambardeli’s award winning Wellington by following these simple steps.
Storage: Store in freezer on day of receipt until 24 hours before cooking.
Your Wellington is ready to serve when the top is golden brown and the middle is heated all the way through. To have that and avoid a soggy bottom then follow my tips below.
To cook:
Step 1 First remove Wellington from freezer and allow to thaw in fridge for 24 hours before baking.
Step 2 Pre-heat your oven to 180 degrees. Heat your baking tray.
Step 3 carefully remove the baking tray from the oven and place on a heat resistant surface.
Step 4; Remove all packaging from the Wellington.
Step 5 Place the Wellington onto the pre-heated baking tray
Step 6 Brush the Wellington with plant based milk to brown and poke 2 or 3 slits in the top to allow the steam to escape. The slits help the pastry to stay on the roast inside.
Step 7. Place the Wellington in the oven
Step 8. Allow to bake for 15 mins.
Step 9. Check the Wellington
If you see that the top is cooking before the rest then cover with foil or baking paper
Step 10. Check the bottom of the Wellington by carefully turning it upside down.
If the bottom is not cooking as quickly as the top then very carefully and gently place the Wellington upside down on the baking tray and return to the over for 10 min. Check again. If its baked nicely then again carefully and gently turn it back the right way up and replace in oven for a further 10 mins to cook.
Step 11 Check that the inside is hot.
Insert a thin bladed knife into the top of the Wellington. Remove it and carefully test on your skin to see if its hot.
When its hot in the middle and the top is golden brown its ready to serve. Enjoy!!
